Longevity Cobbler
Longevity Cobbler
I can’t make traditional American desserts with white flour and white sugar. It’s not snobbery; I just know there’s so little nutrition in those deracinated ingredients, one might as well eat plastic.
I can literally hear my Chinese mom say – ZERO NUTRITIONAL VALUE!!! – when questioned why she’s not baking us cookies, brownies or cake.
I recently had some Kentucky peaches I’d intended to enjoy fresh but forgot, and thus began a spontaneous late Summer baking session – one that filled my already scorching house with more heat, and the scent of baked peaches, vanilla and butter…
This recipe can be done with any fruit-—we’re just adding two longevity ingredients from TCM (Traditional Chinese Medicine).
If you’ve tried my Longevity Bread or Longevity Noodles you are familiar with black sesame. Black sesame nourishes Jing essence, stored in the kidneys, and slows down aging through its ‘moistening’ energy – hair follicles are nourished, eyes moistened (eye is also connected to liver) and skin is kept supple.
I’ve added Goji berries to nourish and build blood. Goji is a tonic food that has a gentle, deeply restorative action in the body. Blood is key in Chinese medicine and I find it interesting that blood is mentioned 447 times in the Bible (KJV).
Similarities across cultures cannot be denied.
I prefer to use a muesli like Seven Sundays instead of Extra Thick Oats. It already has some dried fruit, seeds and coconut. I use the Blueberry Chia one. It’s just more interesting but of course regular oats work fine.
Bob’s Red Mill makes some great mueslis like Tropical, Fruit and Seed and Paleo. I don’t know why people don’t bake more with these. They are sooo fun.
Lastly, back in the 90s I used to eat so much of this Swiss Alpine Muesli that you could only find in the hippie-est of health food stores. It came in a cardboard box like cereal, before the plastic ziplocks, before Amazon and Whole Foods.
I really like this warmed with whole milk Greek yogurt or vanilla ice cream.
INGREDIENTS
2-3 large peaches, chunks (substitute apples or pears or any fruit you like)
2 TBSP goji berries
1 TSP vanilla
1/4 C butter or coconut oil, melted
2/3 C muesli
3 TBPS black sesame seeds
3 TBSP any sugar (coconut, white, honey might work)
1/4 TSP salt
DIRECTIONS
Preheat oven to 350F
Dice fruit into large chunks or slices if you prefer, and line them in 9 x 9 or 8 x 8 baking dish
Sprinkle with goji berries
In separate bowl, combine muesli, salt, sweetener, sesame seeds, vanilla and melted fat. Stir to incorporate. Layer over fruit.
Bake for 40-50 min. If crumble gets too dark, add foil to cover until fruit starts to bubble. Bake extra 10 -15 minutes.
Enjoy,
Catherine & Satya
P.S.
Other combinations I really like using the same principle of muesli plus goji berries and black sesame seeds:
—Pear with almond extract and cardamom
—Blueberry with lemon extract and coarse cut lemon rind
—Apple with Pumpkin Pie Spice
