The internet is full of processed, powdered collagen.

I know the sight of chicken feet makes people squirm, but the health benefits from DIYing this superior collagen product are worth it.

Chicken Feet Collagen Broth is so great for hair, skin, nails and joints. I could see a difference in my skin the next day after drinking 1 C.

It is HARD to get over the sight of them initially. If you read anywhere that you must cut the nails off for maximum collagen release, that’s untrue.

Just a very long simmer in a stockpot will render the most potent, gelatinous broth.

You can add 1-2 TBSP to your dog’s dinner to support their joints as well.

SOURCING ORGANIC CHICKEN FEET ( CHICKEN PAW PAWS)

Latino markets and Asian markets will sell these thawed on ice but they’re not organic.

The only organic source I’ve found is Mary’s out of CA.

If you are within driving distance of an Azure grocery drop, they sell 20# boxes of frozen Mary’s Organic Chicken feet and deliver to all 50 states. It runs about $120. Azure is an Oregon based, Christian, family owned, alternative grocery model. I started ordering from them during the lockdowns. Your food is delivered by tractor trailer on a pallet, and the local coordinator and volunteers unload it. You meet everyone at a designated place – called a ‘drop’ – and get your stuff. Most drops happen monthly.

Azure has everything from meat, to fresh fruit from their orchards, to pantry staples, mason jars and supplements. Highly recommend knowing about them.

*IMPORTANT NOTE: the feet are frozen together into 2 giant slabs about 1 x 2’ Long.

Let them thaw out enough and then break apart, portion into freezer bags, label and freeze.

**This is the stovetop method. You can also make it in a pressure cooker but I don’t have one.

I don’t think there’s a need to add ACV to leash minerals from the bones. The feet disintegrate and I also don’t care for the bone marrow/ACV funk.

EQUIPMENT

  • Large stock pot

  • Fine mesh sieve

  • Smaller sieve (optional)

  • Soup ladle

  • Mason jars

  • Funnel

CHICKEN FEET COLLAGEN BROTH (makes ~16 cups, 4 quarts)

  • 2 dozen chicken feet, organic

  • Celery Stalk

  • Carrot

  • Onion, bay leaves, garlic (optional but omit if sharing with your pets)

  • Salt & Pepper

  • 18-20C filtered water

DIRECTIONS

Wash the chicken feet. Place all ingredients in pot.

Bring to a boil and skim any residue that accumulates on the top.

Cover and simmer 8-10 hours, or until the chicken feet really start to disintegrate.

Cool and strain.

When decanting, I use the smaller sieve to do another round of filtering. I suppose if the chicken feet were not well washed there could be sediment that would demand a cheesecloth straining.

If you’re freezing the jars, make sure to leave 2” at the top for expansion. The WIDEMOUTH QUART mason jars from Azure have not cracked on me during freezing.

*If you’re making this to share with your dog, omit the onion, S & P, garlic, and bay leaf.

RECIPE IDEAS

Can be used as the base for miso soups, chicken noodle soup, Mexican chicken soup, or just sipped on a cool Fall morning.

Also great if you’re fasting or doing a light detox.
