Forlorn Vegetable Slaw

A single shriveled apple in the corner of the crisper.

A wilted green cabbage.

A few nubby misshapen carrots.

From these humble ingredients—forlorn and forgotten produce—a magical slaw can be made.

This is what I discovered today while trying to use up forlorn CSA produce, and an apple left over from – GASP – winter.

I love this recipe because so much could be added – slivered almonds, red or green bell pepper, even a handful of minced chives would all be interesting.

It’s truly one to bookmark—a fantastic accompaniment to grilled meat, any sandwiches, or if you’re like me, I randomly ate this for breakfast today.

It’s good to invest in a vegetable slicer (mandoline) and a fishmonger’s glove. I use these two kitchen tools year round for slaws, apple crisps and making Satya’s meals. The 1/16” (1.5mm) setting will give your cabbage a fine hair-like texture, but the blade may clog easily. Here I used a combination of 1/16” and 1/8” (3mm) for the cabbage, and 1/16” for the paper thin apple.

FORLORN VEGETABLE SLAW (Serves 4)

INGREDIENTS

1/2 green cabbage, finely shredded

1 apple, paper thin

1 carrot, julienned

1/2 red onion, fine minced

DRESSING

1/2 C ACV (apple cider vinegar)

3 TBS lite brown sugar

3 TBS vegetable oil

2 tsp celery seed

2 tsp mustard seed, ground

1 tsp salt

DIRECTIONS

Assemble the vegetables in a very large bowl.

Whisk the dressing separately, pour over and incorporate.
