Japanese Pumpkin Soup
One of the things I LOVE about getting a CSA box is INTRODUCTION TO NEW VEGGIES! Not having a recipe inspires creativity!
My box this week included a Japanese Black Futsu Pumpkin, which is technically a squash and was not even black but orange.
This new-to-me warty, EDIBLE skin gourd is an heirloom winter squash with sweet, chestnut flavored flesh. They begin life as dark green to nearly black, and become orange, tan or brown as they mature.
If you’ve ever bought these gourd type things in the Fall you know cutting into them is challenging. Don’t risk it. Wash the gourd and plop it on a tray in your oven. Once it’s soft, you can slice, remove the stem and the seeds, and roast.
This recipe required zero measuring – you really cannot do it wrong. Butternut squash or any squash or pumpkin would be great too – some types may require peeling.
I used 3C of my Collagen Chicken Feet Broth as the base but you could keep it vegan with Vegetable broth, or substitute a store bought chicken broth.
Japanese Pumpkin Soup (Serves 5-6)
INGREDIENTS
1 Black Futsu Pumpkin Squash
3 carrots, chunks
1 apple, sliced
1 red onion, sliced
3-5 garlic cloves
2-3 TBSP olive oil
1 tsp salt
1 tsp ginger powder
1/2 tsp turmeric
3-4 C Collagen Chicken Feet Broth
1-2 C filtered water
DIRECTIONS
Add the vegetables to a large bowl. Add oil, salt and pepper, turmeric and ginger. Spread on parchment sheet along with washed pumpkin (whole).
Bake at 375 for 20 min.
Remove and transfer all except pumpkin to stovetop. Add chicken feet broth and water. Cover and simmer.
Remove stem and slice pumpkin. Add S & P.
Bake at 375F for 15-20 min.
Add pumpkin to soup. Simmer 10 min.
Immersion blend.
I serve with a dollop of lebneh (a nice, tart contrast to sweet nutty soup) + fresh grated nutmeg. Crusty bread and you have a meal!
