Longevity Bread
I LOVE THIS BREAD!
I whipped it up one morning quite spontaneously. Soft crumb with a crunchy exterior, it is a keeper!
This bread has some of my favorite longevity ingredients – goji berries and black sesame – and is delicately balanced between sweet and savory.
Although not gluten free, there is no added sugar or white flour.
Goji berries, also called Wolf berries, are a tonifying longevity food in Traditional Chinese Medicine. They boost the immune system, move qi and blood and are an all around anti-aging superfood!
Another way I like to use goji berries is by infusing them into herbal teas. You can throw a teaspoon of goji berries into your mug, or if you make tea infusions in a French press, about 1 TBSP/quart of boiling water. Make sure to eat the goji berries after!
Black sesame seeds are a longevity food that strengthen Jing essence. Jing is stored in the kidneys, somewhat analogous to the Western system of the adrenal glands. Jing replenishing foods like black sesame seeds nourish kidneys, slow hair loss and hair greying and aid constipation. They are a phytoestrogenic food and can be supportive during menopause.
*The most bio-available way to consume black sesame seeds is by grinding them into a paste. I do this in a small grinder, 1 TBSP at a time, and whisk into a warmed non-dairy milk for an incredible elixir. Pinch of salt, cardamom and cinnamon is nice too! If this is too much work, my friend Rehmannia makes a famous Jing tonic powder called Spirit Jing which has ground black sesame seeds as a primary ingredient.
Let’s bake!
LONGEVITY BREAD (makes 12 1″ slices)
2 C organic whole wheat flour (I use Bob’s Red Mill)
1 TSP baking soda
2 TSP baking powder
1 TSP salt
1 egg
Water + 2/3 C soy milk, or milk of your choice
2 TBSP vegetable oil
5 TBSP organic black sesame seeds
1 C dried goji berries, soaked in boiling water filled to brim (1 C glass pyrex measuring cup)
DIRECTIONS
Sift dry ingredients (flour, salt, baking soda, baking powder) into large bowl.
Add black sesame seeds and incorporate.
In separate bowl, whisk egg with vegetable oil and soy milk.
Add wet to dry. Then add goji berries and their soaking water. Mix to incorporate.
If mixture does not look like wet concrete, add more water, 1 TBSP at a time.
Pour into loaf pan lined with parchment paper.
Bake at 430F for 7-10 min. Reduce to 350F and bake for 15 min or until a skewer comes clean.
